The "Know-how to smoke" comes from the cold, traditional method, hot smoking with alder wood.
Olivier has imported from his many journeys in the Nordic countries an ancestral know-how, hot smoking and a unique recipe around an exceptional fish: sturgeon hot smoked with alder wood. It introduces you to new original flavors and the combination of two local resources: sturgeon from Teich and alder wood from the Landes de Gascogne Natural Park. A pleasure to discover with family or friends, as an aperitif or as a main course.
